This weekend, The Essential Baking Co. hosted the first of a two-part Persian pop-up bakery series at their local Wallingford cafe. The crowds came out, en masse, to scoop up a sampling of Persian sweets, including chickpea cookies, date buns, and sweet fermented bread. Inspired by childhood memories of Persian sweets prepared by the baker’s Iranian grandmother, Pastries of Persia was the culmination of months of recipe testing and perfecting.
The second of this pop-up series is scheduled for Saturday, August 5th at the same location and will feature savory breads of Iran.

A great part of the experience was seeing so many people from the local Iranian community filling the cafe tables and enjoying the pastries. Food is such a unifying force in our lives and among our communities. Congratulations, Sohroosh. Good luck with the next pop up on August 5th.
